Preheat oven to 400 degrees

In a small sauce Pan, addsapplejuice and quinoa. bring to a boil and simmer 10 minutes.

Stir in apple pecans and green onions. Turn off heat and let it sit uncovered for 5 minutes, or until liquid is absorbed.

Flatten each chicken breast to about 1/4 inch thick.

Place 1/4 quinoa mixture on each chicken breast. Roll up and secure with wet toothpicks.

Heat oil in skillet over medium high heat. Add chicken and cook 5 minutes or until lightly browned.

Transfer to baking pan. Bake 25 minutes. Chicken should not be pink in the middle.
