Savory Breakfast "Muffins"

Make a batch of these in a muffin tin, then store in the fridge to reheat throughout the week. They are great fresh from the oven only take ~30 secs to reheat if you store them for later.

Make a batch of these in a muffin tin, then store in the fridge to reheat throughout the week. They are great fresh from the oven only take ~30 secs to reheat if you store them for later.
Cooking Instructions

Preheat oven to 350 F
- 2
Use a cup/glass to cut out 12 circular bread/tortilla bases and place in each of the muffin cups in the pan. (Does this make sense?)

Make a wall inside each muffin cup with the uncooked bacon. (This will keep the egg inside the cup.)

Fill each cup with a raw egg. (The bacon wall should hold it in.)

Cook for approx 35 min or until eggs are cooked.

I can't remember where I first saw this recipe but I've been making it for years. You can sub the ham for bacon, turkey, sausage or any other protein you like and I just use whatever cheese I have in the fridge.
