Easy Colorful Sports Day Bento 2007

Normally, September and October—the sports day season—are still quite hot, so I wouldn’t usually recommend using smoked salmon marinade. I added it for color, even though it was a bit forced. Since it was a really hot day, I was worried, but I used an ice pack just in case. No one got sick, so I guess it was fine!

[Beef and Vegetable Teriyaki Rolls] [Day before] Boil the broccoli and carrot. Wrap them with the thinly sliced beef seasoned with salt and pepper. [Day of] Dust lightly with flour (not included in ingredient list), pan-fry, then add soy sauce, mirin, and sake to glaze with teriyaki sauce.

[Flavorful Simmered Hijiki Seaweed by Kyoku] Add cooked soybeans for variation.

[Potato Salad Ham Rolls] [Day of] Make fluffy boiled potatoes, mash, and season with onion dressing. (This lets you use less mayonnaise later.)

Mix sliced cucumber and onion, rub with salt, squeeze out excess water, then combine with the potatoes. Season with mayonnaise, salt, and pepper. Roll up in halved slices of ham.

[Smoked Salmon, Broccoli, and Asparagus Marinade] [Day before] Blanch the broccoli and asparagus until just tender. Marinate with sliced onion and 0.7 oz (20 g) of the salmon in onion dressing. [Day of] Use the remaining salmon to make rose-shaped garnishes.

[Mini Tomato and Quail Egg Skewers] Thread a quail egg, cucumber cut with a small cutter, and a cherry tomato onto each skewer, in that order.
