Thick, Fluffy Pancakes Like the Package!

There's a trick to how you mix! With just a simple change in mixing, your usual pancakes can turn out completely different. All you need is a regular whisk.

In a bowl, add the egg, milk, and yogurt. Whisk well until combined.

Add the pancake mix all at once. Now for the key step: Use the whisk to scoop up the batter and let it drop back into the bowl, tapping it in. Repeat this motion several times.

Continue scooping and dropping the batter 10 to 15 times. The batter should become thick and heavy, similar to the texture of miso paste.

Cook the pancakes as you normally would. (I use a nonstick skillet over very low heat without oil.)

When you see bubbles forming in 2 or 3 spots, flip the pancake. You'll notice it puff up nicely!

Because they're so thick, you can even make a sandwich with prosciutto or ham if you like.
