Ingredients

Serves 1 serving
  1. 1pork cutlet (for tonkatsu)
  2. 1 pinchsalt
  3. 1 pinchblack pepper
  4. as neededAll-purpose flour,
  5. as neededEggs,
  6. as neededPanko breadcrumbs,
  7. Vegetable oil, as needed (for frying)
  8. 1/4onion
  9. 1egg
  10. 1/2 cupdashi stock (about 100 ml; you can use instant dashi powder)
  11. 1/2 tablespoonsugar
  12. 1/2 tablespoonsake
  13. 2 tablespoonssoy sauce
  14. 1 1/2 tablespoonsmirin
  15. A fewsprigs of mitsuba (Japanese parsley)

Steps

  1. 1

    Pound the pork with the back of a knife, then season with salt and pepper. Coat the pork in flour, then dip in beaten egg, and cover with panko breadcrumbs. Fry in oil over medium heat until golden brown, then drain excess oil.

    In a skillet, combine the dashi stock, sugar, sake, soy sauce, and sliced onion. Bring to a boil.

  3. 3

    When the onion is tender, add the cutlet and pour in half of the beaten egg. Let it simmer briefly. Add the remaining egg, cover with a lid, and steam for a short time until the egg is just set.

  4. 4

    Serve over rice in a bowl and garnish with mitsuba. Enjoy!
