Cooking Instructions

Grease the pan. Preheat the oven to 350°F.

Measure the rice flour and baking powder into a plastic bag.

Seal the top and shake well to mix.

Place the banana in a bowl and mash it with a whisk.
*It's easier to mash if you stand the whisk up! - 5
Place the bowl on a scale and add the sugar while measuring. Mix well after adding.

Crack the egg directly into the bowl, and add the vegetable oil and milk using a measuring spoon. Mix well with the whisk.

Add the dry ingredients all at once and mix until there are no dry spots.

Pour the batter into the pan and bake at 350°F for 20 minutes, then at 340°F for 10-15 minutes until done.

If you double the recipe, it makes one 6-inch square cake.

Using muffin tins, you can make 5-6 muffins. Top with banana slices for decoration.

It's also recommended to decorate with banana slices as a topping.
