Cooking Instructions

Cut the pumpkin into quarters, wrap in plastic wrap, and microwave for about 5 minutes until soft. If you don’t like the skin, remove it after microwaving.

Bring a pot of water to a boil, add salt, and cook the edamame for 2–3 minutes. Drain and let cool. (If using frozen edamame, just thaw.)

Transfer the pumpkin to a bowl and roughly mash with a spoon. Add the mayonnaise and parmesan cheese, and mix. Adjust the flavor as needed.

Add the edamame and mix. Season with salt and black pepper to taste, and it’s ready to serve.
