Ingredients

  • Main Ingredients
  • 1 cankidney beans (15 oz )
  • 1 canblack beans (15 oz)
  • 1 cupfrozen shelled edamame (thawed)
  • 1 1/2 cupfrozen sweet corn (thawed)
  • 1/2red onion, finely chopped
  • 4green onions, sliced
  • 1small sweet red bell pepper, finely chopped
  • 1/4 cupfresh cilantro, loosely packed
  • Dressing
  • 1/2 cupolive oil
  • 2 clovegarlic, minced
  • 1/4 cupred wine vinegar
  • 1 1/2packets Splenda (or about 1tbsp white sugar)
  • salt and pepper
  • 1 tspchili powder
  • 1 tspground cumin

Steps

  1. 1

    Mix together the 8 main ingredients in a large bowl.

  2. 2

    In a small bowl, whisk together the dressing ingredients.

  3. 3

    Add dressing to bean and edamame salad and stir to mix well.
