Cut the potatoes into bite-sized pieces, wrap in plastic wrap, and microwave at 600W for 5–6 minutes.

Mash the potatoes while they're still hot.

Mix the mashed potatoes with all the ingredients marked with ● until well combined.

Spoon the mixture onto the gyoza wrappers. Moisten the edges with water, fold in half, and press to seal.

Unlike pan-fried gyoza, you don't need to pleat them—just fold in half and press. It's easy!

Heat a small amount of oil to 350°F (180°C) and fry the gyoza on both sides until crispy.

Serve with salt or ketchup if you like.
