Pound the chicken breasts to an even thickness and cut into bite-sized pieces. Place in a bowl with the mayonnaise, sake, salt, and pepper. Massage to coat, then let marinate for 10–30 minutes. (Remove the chicken skin if you prefer.)

Put the panko breadcrumbs in a plastic bag. Add the chicken pieces and shake to coat. Press the panko onto the chicken with your hands to help it stick.

Pour about 1/2 inch (1 cm) of vegetable oil into a frying pan and heat to 350°F (180°C). Add the breaded chicken pieces. When the edges of the chicken turn white, flip them over.

When you hear a sizzling sound, that's your sign the chicken is done frying.

Plate and serve. You can use this same method for pork cutlets (tonkatsu) too!
