Ingredients

  • 7 oz (200 g)edamame (use as much as you like)
  • [Marinade for Ohitashi Mame]
  • About 2 3/4 tablespoons mentsuyu (Japanese noodle soup base)
  • 1 tablespoonmirin (sweet cooking rice wine; any brand is fine)
  • 3/4 cupwater (200 ml)

Steps

  1. 1

    Boil the edamame until just tender, remove the beans from the pods, and peel off the thin skins from the beans.

    For the marinade: Add all the marinade ingredients to a pot and bring to a boil. If you prefer a sweeter flavor, add more mirin.

    Add the edamame from step 1 to the marinade, and let them soak in the refrigerator for 2 hours to half a day. They're ready to eat after marinating.

    [Variation]
    Make extra marinade from step 2 and use it to make cold ochazuke (rice with tea and toppings). It's also delicious served warm.

    Additional Note 1*
    If you can find green soybeans, soak them in water to rehydrate, then use them in this recipe.

    Additional Note 2*
    In Nagano, ohitashi mame is often made with kurakake beans. I tried it with those, too!

    Additional Note 3*
    For New Year's, it's common to add kazunoko (herring roe) to ohitashi mame. This is another tasty way to enjoy it!
