This is a fluffy, airy soufflé pancake made in a skillet without a mold, using pancake mix.

I wanted to easily make a single serving of soufflé pancake.
If you want to make two servings, just double the ingredients.

1egg yolk
1 1/2 tablespoonspancake mix
1 tablespoonmilk
1egg white
2-3 teaspoonssugar

Prepare two dry, clean bowls. Separate the egg white and egg yolk into the bowls.

Add the egg white and sugar to one bowl. Beat with a hand mixer until stiff peaks form—the meringue should not fall out if you turn the bowl upside down.

Add the pancake mix and milk to the bowl with the egg yolk. Mix well (you can use the beaters you just removed).

Preheat a skillet over low heat. Add one spoonful of the meringue to the egg yolk mixture and mix well with the removed beaters.

Add the rest of the meringue to the egg yolk mixture. Gently fold about 10 times, scooping from the bottom in a circular motion.

Spoon about two-thirds of the batter onto the skillet, making a mound. Slightly indent the center. Keep the heat on low.

Cover and cook on low for about 2 minutes. When the surface starts to dry, mound the remaining batter on top (this helps make it thicker).

Cover and cook on low until the surface dries. Flip and cook slowly until done! You'll have a 3/4-inch (2 cm) thick, fluffy pancake.
