Roasted tomatillo salsa

We took a trip to Cabo San Lucas for our honeymoon 5 years ago and a restaurant had this salsa that I loved. When we got home I kept trying to replicate it. It took some time but I think I finally mastered it. I used to boil the tomatillos to soften them but roasting them added flavor and made it that much better.

Peel and wash tomatillos. Cut jalapeño in half, if you want more spice leave seeds in, if not scrape them out.

Place tomatillos, onion and jalapeño on a cookie sheet. Drizzle with oil and sprinkle with salt.

Place your oven rack on the top shelf and turn oven to broil hi. Place cookie sheet with ingredients in oven.

Cook for 5 minutes on each side. Continue flipping them until everything is well roasted, slightly browned. Onion usually cooks more quickly followed by the jalapeño so pull them out as they look done so they don't burn.

Place cilantro and lime juice in food processor or blender. Add tomatillos, onion and jalapeño in the blender as well as they finish roasting. Blend until all ingredients are well mixed.

Add avocados last and blend until smooth.

Chill and serve with chips. Also good on any Mexican dish like tacos, burritos or enchiladas.
