Ingredients

  1. For the Crust
  2. 2cuos crushed oreo cookies
  3. 3 tablespoonsmelted butter
  4. For White Chocolate Cherry Cheesecake
  5. 6 ouncesgood quality white chocolate, chopped
  6. 1/4 cupheavy cream
  7. 3 (8 ounce)packages c cream cheese at room temperature
  8. 1 cupsour cream
  9. 1 cupgranulated sugar
  10. 1 teaspoonvanilla extract
  11. 1/4 teaspoonsalt
  12. 1 teaspooncherry extract
  13. 3/4 cupchopped marachino cherried
  14. 3large eggs
  15. For White Chocolte Whipped Cream Topping
  16. 1 3/4 cupheavy cream
  17. Garnish
  18. 8 ouncesgood quality whit chovolte chocolate, chopped
  19. as neededsteed marachino cherries,
  20. as neededLindor White Truffles for decoration,
  21. asneeded red colored sugar

Cooking Instructions

  1. 1

    Make Crust

    Spray a 9 inch springform pan with bakers spray. Preheat the oven to 325. Line a baking sheet with foil

    Combine cookie crumbs and butter in a bowl, mix well

  4. 4

    Press into prepated pan and freeze while preparing cheesecake

    Make White Chicolate Cherry Cheesecake

  6. 6

    Have chopped chocolate in a bowl. Heat cream until hot pour over chocolate abd stir smooth

    In another large bowl beat cream cheese and sugar until smooth, add both extracts and salt

    Beat in white chocolate and cream

    Beat in eggs one at a time

    Fold in sour cream and cherries

    Place in crust, place pan on foil lined baking sheet, bake 50 to 60,inutes until edges are set but center is still slightly jiggly. Cool lightly covered with foil on foil lined pan until room tempura ture, then cover and refrigerate overnight

    Make White Chocolate Truffle Mousse Toppimg

    Have white chocolate in a large biwl,. Heat cream until hot pour over chocolate, let sit 1 minute then stir until smooth. Cool to room temperature the cover and refrigerate until very cold, at least 4 hours or overnight

    Finish cheesedpcake

    Make White chocolate Truffle Topping

    Beat cold white chocolate mixture until light and fluffy

    Spread on top of cheesecake

    Remove sides of sprinform oan

    Garnish cheesecake with marachino berries and white yruffled

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
