Easy Whole Egg Carbonara Udon

Thank you for all the attention and magazine features! This is a quick and easy carbonara udon that my kids love—just boil, sauté, and toss everything together. I created this recipe after seeing something similar on TV, making it simple for home cooks and using whole eggs instead of just yolks.
Steps
- 1
Boil the udon noodles. Cut the bacon into bite-sized pieces. Thinly slice the onion and garlic.
- 2
Heat 1 tablespoon olive oil and the garlic in a frying pan. When fragrant, add the bacon and onion, sauté, then add the heavy cream.
- 3
When the cream starts to bubble, add the cooked udon noodles and mix well. Season with salt and black pepper to taste.
- 4
Turn off the heat, quickly pour in the beaten eggs, and toss. Serve in bowls and top with black pepper and parsley as desired.
- 5
Add grated Parmesan cheese if you like. You can also mix it in during step 3 for extra flavor.
- 6
If you use pasta noodles instead of udon, it becomes a classic carbonara.
