Whenever I make this, my little taste testers show up, help themselves, and before I know it, half is gone!
Recipe background: My family loves sesame-dressed vegetables so much that even if I use two bunches of spinach, it disappears in one meal. It gets expensive for a side dish... The solution? Cabbage! Even the tougher outer leaves that aren’t great for slaw taste delicious when mixed in here.

Ingredients

Makes about 1 batch
  1. About 1/2 head cabbage
  2. 3-4 tablespoonsground sesame seeds (about 24–32 grams)
  3. 1heaping tablespoon sugar (about 13 grams)
  4. 1 tablespoonsoy sauce (about 15 ml)
  5. Pinchsalt
  6. About 1/2 teaspoon granulated dashi (about 2 grams)
  7. PinchMSG (optional)

    Even if it looks like a lot, it shrinks down and gets eaten up quickly.

    Boil the cabbage in plenty of hot water until it reaches your preferred tenderness. Drain, squeeze out excess water, cut into strips about 1/2 inch (1 cm) wide, and squeeze out any remaining water again.

    Mix all the ● seasonings together, then add the cabbage and toss to combine.

    This is also delicious with spinach or Japanese parsley (seri).
