Fresh Cherry No Bake Cheesecake

This is a very simple light and creamy no bake cheesecake full of cherry flavor accented with tiny chocolate chips and pieces of fresh cherries. Perfect for Valentines day or any day!!

Ingredients

  1. For Crust
  2. 2 cupscrushed oreo cookies
  3. 5 tablespoonsbutter melted
  4. For Cheesecake Filling
  5. 16 ouncescream cheese, at room temperature
  6. 1 cupgranulated sugat
  7. 1large 6 ounce box of black cherry gelatin
  8. 1 1/2 cupsboiling water
  9. 6-8punces fresh or frozen thawed cherries
  10. 1teapoon vanilla extract
  11. 2 cupsheavy whipping cream
  12. 1/2 cupmini chocolate chios
  13. For Chocolate Ganache Topping
  14. 1/2 cupsemisweet chocolate chips
  15. 1/4 cupheavy whipping cream
  16. For Garnish w
  17. white chocolate shavings
  18. whole cherries
  19. fresh whipped cream

Cooking Instructions

    Make Crust

    Combine cookie crumbs and butter in a bowl

  3. 3

    Press into a 9 inch non stick sprayed springform pan, freeze while preparing filling

  4. 4

    In a bowl dissolve gelatin in boiling water, refrigerate just until cold but mot setting up

  5. 5

    Chop 1/2 cup of the cherries, pitted

  6. 6

    In a bowl beat cream cheese with sugar and vanilla until smooth

  7. 7

    In another bowl beat cream until it holds its shape

  8. 8

    Beat cold gelatin into cream cheese mixture until blended

  9. 9

    Fold in whipped cream chopped cherries and mini chips

  10. 10

    Pour into prepated crust and smooth top, refrigerate at least 6 to 8 hours until set

    Make Chocolate ganache Topping

    Heat cream to a simmer in the microwave or stovetop. Pour over chovolate chips in a bowl, let sit 1 minute then stir smooth

    Remove sides from springform pam

    Let chocolate sit until a thick but still able to pour, drizzle over set cheesecake. Refrigerate until set

    Garnish each slice with whipped cream and a cherry

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
