Ingredients

Makes about 12 rolls
  1. Dough
  2. 2 1/2 cupsbread flour (about 300 grams)
  3. 2/3 cupmilk (about 150 ml)
  4. 1 teaspoondry yeast
  5. 1/8 cupsugar (about 30 grams)
  6. 1/4 cupbutter (about 60 grams)
  7. 1/2 teaspooncardamom powder
  8. 1/2beaten egg
  9. Filling
  10. as neededButter (or margarine),
  11. as neededCinnamon,
  12. as neededGranulated sugar,
  13. Topping
  14. 1/2beaten egg
  15. as neededCoarse sugar,
  16. as neededCrushed almonds,

Steps

  1. 1

    Melt the butter in a pot, add the milk, and warm to body temperature. Add the cardamom and stir. Transfer to a bowl and add the yeast and sugar.

    Gradually add the bread flour to the mixture in step 1, then add the egg and knead well. Form into a ball and let it rise for 30 minutes to 1 hour.

    Roll the dough into a rectangle, spread softened butter (or margarine) on it, sprinkle with granulated sugar and cinnamon, and roll it up.

    Cut the rolled dough into about 12 pieces, as shown in the picture, cutting in a 'V' shape.

    For the cut dough in step 4, place the narrow end of the 'V' facing up, and press down with your fingers as shown in the picture to shape it. Let it rise for another 30 minutes.

    Brush with beaten egg, then sprinkle with coarse sugar and crushed almonds.

    Bake in a 390–435°F oven (200–225°C) for 10–15 minutes until done. Baking time may vary, so check occasionally!

    The cover image shows them well-baked, but it's fine to bake them to a golden brown as shown in the above image.
