Drain the firm tofu by placing a weight on it or microwaving it to remove excess water. Drain the pickled ginger as well.

Place the tofu in a bowl and crumble it with your hands. Add all the ingredients except for the dipping sauce and mix well.

Shape the mixture into patties of your desired size. Fry both sides in a skillet over medium heat until lightly browned.

Dip the freshly cooked patties in ginger soy sauce and enjoy.
