Easy Spinach with Peanut Butter Dressing

Featured as a side dish in a premium menu and gained popularity—thank you! This dish offers a different deliciousness compared to sesame dressing. While rapeseed blossoms are the standard, spinach is also great!
The origin of this recipe: My mother used to grind peanuts in a mortar, but I use peanut butter.

Cooking Instructions

I love using Skippy's peanut butter, crunchy and delicious.

Cut the spinach into 2-inch pieces. Boil the stems first for about 1 minute, then add the leaves and boil for another 30 seconds. Rinse in cold water and squeeze out excess water.

Mix the peanut butter with 2 tablespoons of mirin and 1 teaspoon of soy sauce.

Add the spinach to the mixture and toss well.
