My Original Hand Rolls with Crispy Crunchy Tenkasu

I was selected to be a recipe tester for a sushi hand roll project, so I wanted to think up an unusual hand roll combination. This is relatively healthy and inexpensive!

Make sure to marinate the daikon radish properly to flavor it. You don't have to dip these handrolls in soy sauce, they are delicious as-is! The key is the crispy crunchy tenkasu. For 1 rice cooker cup's worth. Recipe by John Lee Cooker

Ingredients

1 serving
  • 180 mlUncooked white rice
  • 2 tbspSushi vinegar
  • 7 cm● Daikon radish
  • 2 tbsp● Mentsuyu (3x concentrate)
  • 5 tbspTenkasu - tempura batter crumbs
  • 1Finely julienned Japanese leek (the white part only)
  • 1Nori seaweed, pre-cut for hand rolls

Steps

  1. 1

    Mix the ● ingredients together in a plastic container, cover and leave in the refrigerator for at least an hour to led the flavors soak in.

    Cook the rice to use as sushi rice. Mix in the sushi vinegar to make sushi rice.

  3. 3

    Put a little sushi rice on a piece of nori seaweed, Top with lightly drained daikon radish, some tenkasu and shredded white leek and roll it up. Done!
