Easy Beef Curry with Store-Bought Roux and Sliced Beef

You can easily make delicious beef curry with store-bought roux, even without using large chunks of meat. This recipe is a slight adaptation of the curry my mother used to make. I find that when making beef curry, it's better if the potatoes don't dissolve too much, allowing the flavorful roux to shine, but it's up to your preference.

You can easily make delicious beef curry with store-bought roux, even without using large chunks of meat. This recipe is a slight adaptation of the curry my mother used to make. I find that when making beef curry, it's better if the potatoes don't dissolve too much, allowing the flavorful roux to shine, but it's up to your preference.

Finely chop the onions, then sauté them in a pot with butter and vegetable oil. Be careful not to burn them!

While the onions are sautéing on low heat for about 20 minutes, cut the potatoes into bite-sized pieces, the carrot into small chunks, and the shiitake mushrooms into easy-to-eat pieces.

Microwave the carrot. Cut the beef into bite-sized pieces, then add it to the pot with the sautéed onions, along with the red wine and sugar, and sauté.

Once the beef is no longer red, add the carrots, potatoes, and shiitake mushrooms, then add salt and sauté before adding water.

Skim off any scum and simmer for 10-15 minutes until the potatoes are cooked through. The time may vary depending on the type of potatoes.

Add ketchup and Worcestershire sauce, dissolve the store-bought roux, and simmer for another 10 minutes to finish.
