Finely chop the cabbage, garlic chives, and green onions. Sprinkle with salt and mix well. Let sit until the vegetables become wilted.

Mix the ☆ ingredients together (for seasoning the gyoza filling).

Combine the dipping sauce ingredients.

Add salt and pepper to the ground pork, then add the seasoning from step 2 and mix well.

Once the vegetables from step 1 are wilted, squeeze out the excess moisture by hand and mix with the ground pork.

Place the filling on a gyoza wrapper, moisten the edges with water, and fold to seal, creating pleats. (Be careful not to overfill, as it will be difficult to seal.)

Arrange the wrapped gyoza on a plate lined with paper towels.

Coat a 10-inch (26cm) frying pan with sesame oil and arrange the gyoza neatly. Turn on the heat and cook on high until lightly browned.

Pour 1/2 cup (100cc) of water over the gyoza, cover immediately, and cook on medium heat for 5 minutes. (Hold the water in one hand and the lid in the other to cover quickly!)

Remove the lid and continue cooking until the water evaporates completely and the bottom is crispy. Be careful as it can burn easily once the water is gone!

Shake the pan to ensure the gyoza are not sticking, then place a plate that fits over the pan and flip to serve.
