Blend all the spices with the dried chiles until smooth.

In a saucepan, heat the oil. Add the chile spice mixture and fry for 1 minute. Add the shredded pork, stirring constantly to coat the meat well with the sauce. Cook for 15 minutes.

If you want to preserve it, place the mixture in jars and process in a hot water bath for 40 minutes.
