Ingredients

Serves 2–3 servings
  1. 1 piece(about 9 oz/250 grams) boneless, skin-on chicken thigh
  2. Salt and pepper, to taste
  3. 1 tablespoonall-purpose flour
  4. 1 tablespoonolive oil
  5. [Teriyaki Sauce]
  6. 1 clovegarlic (grated)
  7. 1 piecefresh ginger (grated)
  8. 1 tablespoonsoy sauce
  9. 1 tablespoonsake (or dry white wine)
  10. 1 tablespoonmirin (or 1 tablespoon honey mixed with 1 tablespoon water)
  11. 1 teaspoonhoney (or sugar)

Steps

  1. 1

    Make a few cuts in the thickest part of the chicken thigh to even out the thickness. Season both sides evenly with salt and pepper.

  2. 2

    Combine all the sauce ingredients in a bowl and mix well.

    Pat the chicken dry with a paper towel. Lightly coat both sides with flour, shaking off any excess.

  4. 4

    Heat the olive oil in a skillet over medium-low heat. Place the chicken skin-side down and cook until golden brown. Flip and cook the other side until golden brown as well.

  5. 5

    If there is excess oil, wipe it out with a paper towel. Cover the skillet and cook on low heat until the chicken is cooked through.

  6. 6

    Uncover, pour in the sauce, and cook over medium-low heat, shaking the skillet to coat the chicken and let the sauce thicken and glaze.

  7. 7

    Slice the chicken into bite-sized pieces. Plate and serve!
