I love cooking with ground meat, so I often make dry curry. I created this vegetable-packed dry curry to enjoy even when I don't have much of an appetite.
Cooking Instructions

Finely chop the onion and green bell peppers into large pieces about 7-8 mm. Roughly chop the tomato. ※ Cut the eggplant just before frying.

Add olive oil to a frying pan and sauté the garlic and ginger. Add the ground meat and cook while breaking it apart, then add the onion and lightly sauté. Turn off the heat.

Cut the eggplant into 1 cm cubes, add to the frying pan from step 2, sprinkle with salt and pepper, and sauté until tender.

Add curry powder and continue to sauté, then add the ingredients marked with ◆ and simmer while mixing.

Finally, add the tomato and green bell peppers, sauté together, and adjust the taste with garam masala, curry powder, or salt as desired.
