I wanted to make a side dish rather than a full-on curry.

Steps

Cut the eggplant into 1 cm thick pieces (either cubes or semi-circles), soak the pieces in water, and drain well.

Dice the onion, but not too finely.
- 3
Stir-fry the eggplant and onion in some vegetable oil.
- 4
Once the vegetables start to cook through, add the meat, and cook that too.
- 5
When the meat has cooked through and is dry and crumbly, stir in the ● ingredients, and continue to stir-fry.

Season the stir-fry with salt and pepper.

Now serve it up.
