Husband’s Favorite! Easy & Spicy Mapo Tofu

Before we got married, I made this mapo tofu for my husband. He absolutely loved it! He even says he married me because of this dish... haha.

Finely chop the garlic, ginger, and green onion. In separate bowls, mix together the ingredients marked with ※ and those marked with ★.

Line a plate with paper towels. Cut the tofu into 1/2-inch cubes, place on the plate, and microwave at 500W for 3 minutes to remove excess moisture.

Heat vegetable oil in a skillet. Add the garlic, ginger, and green onion, and sauté briefly. Add the ground pork and cook until crumbly.

Push the mixture to the side of the pan. Add the chili bean paste and a pinch of sea salt, sauté briefly until fragrant, then mix everything together.

Pour in the combined ※ seasonings. Once it comes to a boil, add the tofu and simmer over medium heat for about 3 minutes.

Add the ★ cornstarch mixture to thicken. Stir in the sesame oil, mix well, and transfer to a serving plate.

I love to sprinkle coriander powder on top to finish. Sichuan pepper is also great!
