Before we got married, I made this mapo tofu for my husband. He absolutely loved it! He even says he married me because of this dish... haha.

Ingredients

Serves 2 servings
  1. 1 blockfirm tofu
  2. 3.5 ozground pork (about 100 grams)
  3. 1 clovegarlic
  4. 1 pieceginger (about 1 inch)
  5. 4-inch piece green onion
  6. 1/3 cupwater (80 ml)
  7. 2 teaspoonssugar (beet sugar used)
  8. 1/2 teaspoonchicken bouillon powder
  9. 1 tablespoonsoy sauce
  10. 2 teaspoonssweet bean sauce (tianmianjiang)
  11. 1 teaspooncornstarch
  12. 1 tablespoonwater
  13. 1-2 teaspoonschili bean paste (doubanjiang)
  14. 1/4 teaspoonsea salt
  15. 1 teaspoonsesame oil
  16. Vegetable oil, as needed (such as rice bran oil)

Steps

  1. 1

    Finely chop the garlic, ginger, and green onion. In separate bowls, mix together the ingredients marked with ※ and those marked with ★.

  2. 2

    Line a plate with paper towels. Cut the tofu into 1/2-inch cubes, place on the plate, and microwave at 500W for 3 minutes to remove excess moisture.

  3. 3

    Heat vegetable oil in a skillet. Add the garlic, ginger, and green onion, and sauté briefly. Add the ground pork and cook until crumbly.

  4. 4

    Push the mixture to the side of the pan. Add the chili bean paste and a pinch of sea salt, sauté briefly until fragrant, then mix everything together.

  5. 5

    Pour in the combined ※ seasonings. Once it comes to a boil, add the tofu and simmer over medium heat for about 3 minutes.

  6. 6

    Add the ★ cornstarch mixture to thicken. Stir in the sesame oil, mix well, and transfer to a serving plate.

    I love to sprinkle coriander powder on top to finish. Sichuan pepper is also great!
