Ropa Vieja with Nopales

This is my own version of the original Ropa Vieja, or just made with what I found in the fridge.

This is my own version of the original Ropa Vieja, or just made with what I found in the fridge.
Steps

Cook the meat with a little garlic and onion in a pressure cooker.

Roast the tomatoes, chiles (don’t let them burn), garlic, and onion.

Shred the meat, peel and cut the potatoes.
- 4
Cook the diced nopales in a copper pot, or if you have a small piece of copper, add it to the pot to help remove the slime. Once cooked, rinse the nopales very well.

Soak the chiles in very hot water, then blend them with the roasted tomatoes, garlic, and onion. Pour this sauce into a clay pot if you have one, season with salt to taste, and add a little of the cooking broth so the potatoes can cook.

Add the nopales and shredded meat, and cook for about 10 minutes until the mixture is between dry and saucy. Serve with cooked white rice.
