I created this recipe when I wanted to make flavorful teriyaki chicken for lunchboxes.

Cut the chicken thigh into bite-sized pieces and coat with potato starch.
Heat oil in a skillet and cook the chicken on both sides. Cover with a lid partway through to cook through.

When the chicken starts to brown, add all the ingredients marked with ○ (sugar, sake, mirin, soy sauce). Cook until the sauce thickens to your liking, then remove from heat. Your teriyaki chicken is ready!

Scoop rice into a bowl.
Top with lettuce cut into thick shreds. Drizzle mayonnaise over the lettuce. - 4
Tear the seasoned seaweed into pieces and scatter over the top. Add the teriyaki chicken and garnish with tomato slices. Enjoy!
