Cut the chicken into slightly smaller bite-sized pieces to help the flavors soak in. Massage the chicken with all the ingredients marked with ★.

Coat the chicken pieces evenly with flour or potato starch. (See tips for details.)

Heat oil in a pot. Fry the chicken in medium-hot oil for about 2 minutes, until lightly golden but not fully browned.

Remove the chicken from the oil and let it rest for about 3 minutes. Increase the oil temperature to high.

Return the chicken to the hot oil and fry for about 1 minute, until golden and crispy.
