I wanted to make udon soup using only seasonings I already had at home, without having to buy special udon soup base. After experimenting with different amounts, I found this combination that works great!

Add the water, dashi granules, light soy sauce, and mirin to a pot. Bring to a boil, then add the frozen udon noodles. Gently separate the noodles with chopsticks as they thaw. Once heated through, turn off the heat.

Pour the soup and noodles into a bowl. Top with green onions, tempura, kamaboko, and, if you like, shichimi togarashi or yuzu peel. Enjoy!

You can use frozen soba noodles instead of udon to make tempura soba with this recipe.

By the way, adding a little grated daikon radish and wakame seaweed to soba is great for people with high blood pressure or those who are prone to constipation!
