Crab Cakes Made with Imitation Crab

Originally, this is an American dish made with a large amount of crab. It's delicious, but using that much crab meat is impractical. However, in Japan, we have imitation crab!
The story behind this recipe: I love crab cakes, but crab is expensive. So, when I saw imitation crab that looks just like the real thing at the supermarket, I thought, 'This might work!' I tried it out. I used green onions because I ran out of regular onions, and it turned out light. Using regular onions would add more sweetness and flavor.

Ingredients

Makes 8 pieces
  • 200 gimitation crab
  • 1 stalk(or 100g if using onion) green onion (or regular onion)
  • 1medium egg
  • 3/4 cup (150 cc)breadcrumbs
  • 1 tablespoonflour
  • 1 tablespoonmayonnaise
  • 1 pinchpepper
  • 1 tablespoonvegetable oil
  • Spinach, broccoli, mixed vegetables, etc. for garnish
  • Lemon juice or tartar sauce as needed (for sauce)

Steps

    Use imitation crab that is packed in a loose form, not the stick type wrapped individually, as shown in the picture.

    The imitation crab in the picture is from a brand called Sugiyo. It looks just like real crab, so it's my favorite. I'm not affiliated with the company.

    Finely chop the green onion or regular onion. Mixing the green part of the onion with the red of the imitation crab looks nice.

    Combine the imitation crab, green onion, egg, breadcrumbs, flour, mayonnaise, and pepper in a bowl and mix well. Using a wooden spatula will keep your hands clean.

    Once the mixture becomes sticky like hamburger patty mix, divide it into 8 portions and shape them into patties. They should be about the size of small hamburger patties for a lunchbox.

    Heat vegetable oil in a frying pan, cover, and cook on low heat. Cook for about 5 minutes on one side, then flip and cook for another 5 minutes.

    At this point, the color will still be light and the surface won't be crispy. Remove the lid and cook on medium heat for about 1 minute on each side to brown them.

    Once both sides are crispy, serve on a plate with the garnish vegetables.

  9. 9

    Serve with lemon juice or tartar sauce. For small children, a sauce made by mixing 1 tablespoon of mayonnaise with 1 tablespoon of ketchup is popular.
