The origin of this recipe
I have always loved eating tokoroten with aonori and vinegar soy sauce, and I enjoyed combining it with sweet red bean paste. After some trial and error, I completed this anmitsu-style dish! ✿ The unexpected deliciousness of the aonori soy sauce kanten and sweet red bean paste is a must-try this summer! ✿
Steps
- 1
In a pot, combine the kanten powder and water, and stir while bringing to a boil over low heat. Once boiling, continue to stir for about 2 more minutes to dissolve the kanten, then turn off the heat.
- 2
Add the soy sauce and sugar to step 1 and mix well, then bring to a boil over low heat. At this time, remove any foam from the kanten.
- 3
Turn off the heat in step 2 and add the aonori, mixing well. Let it cool down slightly. *Be careful, as the aonori and kanten will separate if it's too hot.
- 4
Once it has cooled down, mix it lightly again and pour it into a container or mold that has been moistened with water. Refrigerate to set.
- 5
Remove the kanten from the container or mold and cut it into your desired size. This time, I made larger cubes, about 1.5 cm. The aonori soy sauce kanten is now complete.
- 6
Note 1*
When removing from the container or mold, insert a knife or toothpick around the kanten to introduce air, making it easier to remove. - 7
Serve the cubed kanten from step 5 with your preferred sweet red bean paste (this time I used chunky red bean paste) and garnish with sesame seeds, wasabi, or mustard (this time I added wasabi). Enjoy! ✿
- 8
Note 2*
Feel free to drizzle the 'tokoroten dipping sauce: vinegar soy sauce' over it. I love it that way! ✿ - 9
[Tokoroten Dipping Sauce: Vinegar Soy Sauce]
Mix all ingredients A together to complete. - 10
The '❁Kanten with Aonori Soy Sauce and Anmitsu❁' can also be adapted to resemble tokoroten or chilled zenzai! ✿
- 11
[Variation 1]
Use a tokoroten maker to create a tokoroten style. This time I added mustard! ✿ Perfect for entertaining! ✿ - 12
[Variation 2]
Serve with chilled sweet red bean zenzai for a refreshing twist! ✿ This is also highly recommended! ✿ - 13
