I don't really measure ingredients as when I make this it depends on how much left over rice I have. This is a good and healthy way of using any leftover white rice. I am giving measurements only as reference

I don't really measure ingredients as when I make this it depends on how much left over rice I have. This is a good and healthy way of using any leftover white rice. I am giving measurements only as reference

Ingredients

  1. 2 cupscooked white rice
  2. 1small onion thinly chopped
  3. 1/2 tspturmeric
  4. 1-2 clovesgarlic grated
  5. 1small green chili pepper coarsely chopped or use to taste
  6. 1/2 cuppeas frozen or partially boiled / cooked green peas
  7. 1small tomato chopped if desired
  8. 2 tbspany oil
  9. 1/2 tsp whole cumin seeds
  10. to tasteSalt
  11. Fresh coriander leaves chopped for garnishing

Cooking Instructions

  1. 1

    Heat oil in heavy bottom sauté pan when hot add cumin seeds, when they start to sputter add garlic stir once or twice to bring out aroma

    Add onions and fry till soft

  3. 3

    Add chillies tomato and turmeric peas and cover and cook on low till tomatoes are soft and mixture sort of dries a little

  4. 4

    Add salt and stir to mix.

  5. 5

    Add rice and stir to mix well,cover and let seasonings blend

  6. 6

    Serve hot garnished with chopped fresh coriander leaves
