Generously sprinkle salt and drizzle sake over the venison, then gently massage it. Make sure to rub it well so it coats evenly.

You'll notice the blood starting to seep out. You can do this once, but if you want to thoroughly remove the odor, rinse it off and repeat step 1.

Add water and gently wash the meat, changing the water several times until the water runs clear and the blood color is no longer prominent.

Once drained, you're done. As shown in the photo, the redness of the blood should fade, and the color should lighten slightly. Use for frying or stews.
