Cut the chicken into bite-sized pieces.

Mix together the soy sauce, sugar, mirin, and sake. For this amount of chicken, use about 1 1/2–2 tablespoons (22–30 ml) of each.

If you like more sauce, increase the amounts. Add the cut chicken to the sauce and let it marinate.

Let the chicken marinate for at least 10 minutes. Heat a frying pan with a little oil, then add only the chicken (not the marinade) and cook.

Once the chicken is cooked through, pour in the marinade and simmer until the sauce thickens.

Serve the hot rice in a bowl, top with the chicken and sauce, add the soft-boiled egg, and finish with a drizzle of mayonnaise.
