Ingredients

Serves 1 serving
  • 5.3–7 oz (150–200 grams) boneless, skinless chicken thighs
  • 1:1:1:1 soy sauce, sake, sugar, mirin (for this amount of chicken, about 1 1/2–2 tablespoons (22–30 ml) each works well)
  • 1soft-boiled or poached egg

Steps

  1. 1

    Cut the chicken into bite-sized pieces.

  2. 2

    Mix together the soy sauce, sugar, mirin, and sake. For this amount of chicken, use about 1 1/2–2 tablespoons (22–30 ml) of each.

    If you like more sauce, increase the amounts. Add the cut chicken to the sauce and let it marinate.

  4. 4

    Let the chicken marinate for at least 10 minutes. Heat a frying pan with a little oil, then add only the chicken (not the marinade) and cook.

  5. 5

    Once the chicken is cooked through, pour in the marinade and simmer until the sauce thickens.

  6. 6

    Serve the hot rice in a bowl, top with the chicken and sauce, add the soft-boiled egg, and finish with a drizzle of mayonnaise.
