I usually made adobo with pork, but when I tried it with chicken, it was much tastier. The method is almost the same, so I decided to add it as one of my recipes.

Steps

Mince the garlic and onion.

Add sesame oil to a pan and sauté the garlic and ginger.

Once fragrant, add the onion and chili pepper, and sauté until the onion becomes translucent.

Add the chicken and sear until slightly browned, then generously sprinkle with black pepper and turn off the heat.

Place the ingredients from step 4 and the ● ingredients into a slow cooker, and cook on high for at least 5 hours.

Optionally, add vegetables like carrots or boiled eggs for extra flavor.

If using a regular pot, bring to a boil, then simmer on very low heat for over 30 minutes.

There were several comments about overcooking, so if using a pot, increase the water and adjust the time while simmering on very low heat.
