In a large pot, heat oil over medium-high heat; brown chicken and transfer to a plate.

Add carrot, onion, peppers, chili powder, oregano and cumin to pot; cook stirring for 5 minutes or until vegetables are softened.

Add tomatoes, kidney beans and tomato paste; bring to a boil. Reduce heat and boil gently for 10 minutes or until thickened.

Whisk flour into milk; gradually stir into pot.

Add corn, cooked chicken; simmer, stirring until thickened.

Season with salt & pepper.

Sprinkle individual servings with cheese.
