Ingredients

Serves 2–3 servings
  • 10.5 ozpork slices or thinly sliced pork (shabu-shabu style is best)
  • For salad-style serving
  • As needed, your choice of vegetables (this time: lettuce and green onions)
  • As needed, your favorite dressing or noodle soup base (mentsuyu)
  • Tomato, cucumber, radish sprouts, seaweed, etc. Check out others' ideas for inspiration!

Steps

  1. 1

    Tip 1:
    "Don’t let the water boil."

    Bring a pot of water to a simmer until small bubbles just start to appear. (If it’s bubbling vigorously, it’s too hot!)

    Tip 2:
    "Keep cooking time short."

    Add the pork slices one at a time, spreading them out. As soon as the color changes, remove them from the water.

    Tip 3:
    "Don’t chill the meat."

    Place the cooked pork in a strainer and let it cool to room temperature. (Do not rinse with water.)

    Arrange the vegetables and pork on a plate. Top with sesame dressing, ponzu, or noodle soup base (mentsuyu) to finish.
