Fluffy and Creamy Omurice with Demi-Glace Sauce

This omurice features fluffy, creamy eggs over chicken rice, topped with a demi-glace sauce made with onions and maitake mushrooms. I previously shared a microwave version of demi-glace omurice, but this is a more authentic recipe. I was inspired to make this after seeing demi-glace omurice on Bistro SMAP, and my child asked me to make it.
Fluffy and Creamy Omurice with Demi-Glace Sauce
This omurice features fluffy, creamy eggs over chicken rice, topped with a demi-glace sauce made with onions and maitake mushrooms. I previously shared a microwave version of demi-glace omurice, but this is a more authentic recipe. Make the demi-glace sauce.

Thinly slice the onion, wrap in plastic wrap, and microwave at 500W for 2 minutes.

Add butter to a pot and sauté the shredded maitake mushrooms over medium heat.

Add the microwaved onions to the pot and continue to sauté.

Add the can or pouch of demi-glace sauce and simmer for about 2 minutes.

The demi-glace sauce is ready!

Make the chicken rice.

Finely chop the onion and carrot. Chop the mushrooms and chicken breast into small pieces.

Wrap the chopped onion in plastic wrap and microwave at 500W for 1 1/2 minutes.

Wrap the chopped carrot in plastic wrap and microwave for 1 1/2 minutes.

Heat olive oil and garlic in a frying pan. Season the chicken with salt and pepper, then sauté over medium heat.

Once the chicken is partially cooked, add the microwaved onion, carrot, and mushrooms. Sauté over medium heat.

Add the chicken bouillon and ketchup, and cook while stirring to evaporate excess moisture.

When most of the moisture has evaporated, add the warm rice and stir-fry well to combine.

Once the ketchup is well mixed in, the chicken rice is done!

Pack the rice into a bowl or mold, then turn it out onto a plate.

Crack the eggs into a bowl, add sugar and milk, and mix well.

Heat olive oil and butter in a frying pan over medium heat.

Once hot, pour in the beaten eggs and stir quickly. Stop cooking when the eggs are still soft and slightly runny.

If you want to shape it like an omelet, use a heat-resistant spatula instead of chopsticks to gently fold the edges toward the center. (Tip added Nov 7, 2017)

While making the omelet, microwave the plated chicken rice for 1 1/2 minutes. Then, use a spatula and chopsticks to place the omelet on top of the rice.

Finally, pour the warmed demi-glace sauce over the top to finish!
