I wanted to try smoking with tea. It was my first time smoking, so I looked it up as I went along (haha).

Prepare for smoking. You will need a frying pan with a lid, a rack that fits inside the pan, and aluminum foil.

Sprinkle salt over the salmon and let it air dry in a well-ventilated area for 30 minutes.

Line the frying pan with aluminum foil, empty the contents of the tea bags onto it, place the rack and salmon on top, cover with the lid, and heat on high.

Once smoke appears, reduce to low heat and smoke for 10 minutes. Carefully remove the salmon to avoid burns and chill in the refrigerator.

Meanwhile, make the tomato marinade. Thinly slice the onion and mushroom. Quarter the tomatoes, lightly chop the dill, and soak in the marinade.

Chill the marinade in the refrigerator. Once well chilled, plate the dish and garnish with dill. For this presentation, place the marinade on the bottom and pour the marinade sauce over the top.
