Ingredients

Serves 1 serving
  1. 1 packagespicy ramen (e.g., Shin Ramyun)
  2. 1 1/2 cupswater (350 ml)
  3. 3/4 cupunsweetened soy milk (200 ml)
  4. 2 tablespoonswhite sesame paste (tahini)
  5. 1 piecefirm tofu (fried or baked)
  6. 1 handfulmaitake mushrooms
  7. 1/2 headbok choy
  8. Chili oil, to taste (optional)

Steps

  1. 1

    Cut the tofu, maitake mushrooms, and bok choy into bite-sized pieces.

  2. 2

    In a pot, add 1 1/2 cups water (350 ml), the spicy ramen, and the cut vegetables and tofu. Simmer for 4 1/2 minutes.

  3. 3

    While it cooks, mix the soy milk and white sesame paste together.

  4. 4

    Once the noodles and vegetables are cooked, add the soy milk mixture. Heat gently until warmed through. For extra flavor, add chili oil or sesame oil to taste.
