A hidden vegan gem—spicy ramen made milder and creamier with soy milk and white sesame paste. It’s warming and filling.

Cut the tofu, maitake mushrooms, and bok choy into bite-sized pieces.

In a pot, add 1 1/2 cups water (350 ml), the spicy ramen, and the cut vegetables and tofu. Simmer for 4 1/2 minutes.

While it cooks, mix the soy milk and white sesame paste together.

Once the noodles and vegetables are cooked, add the soy milk mixture. Heat gently until warmed through. For extra flavor, add chili oil or sesame oil to taste.
