Crack the eggs into a bowl and beat well until the yolks and whites are fully combined.

Add the finely chopped scallion, then mix in the seasonings and water.

Generously oil a tamagoyaki (Japanese omelet) pan or small nonstick skillet. Spread the oil evenly with a paper towel or brush, and heat well.

Pour in the egg mixture and cook using your preferred folding method. (I like to fold it in thirds, cooking in three batches.) Slice evenly and serve.
