Ingredients

Serves 1 serving
  1. 1 packfrozen Sanuki udon noodles
  2. Grated daikon radish, as much as you like
  3. 2 tablespoonsmentsuyu (triple-concentrated noodle soup base)
  4. 1 1/4 cupswater (300 ml)
  5. 1/2 teaspoonlemon juice
  6. Sliced green onions, to taste

Steps

    Mix the mentsuyu, water, and lemon juice together, then chill in advance.

  2. 2

    Grate the daikon radish.

  3. 3

    Boil the frozen udon noodles, then rinse under cold water to cool.

  4. 4

    Place the udon noodles in a bowl, pour over the chilled broth, and top with grated daikon and green onions. Enjoy!
