On my first trip to Okinawa, I tried Spam and egg onigiri at two different shops. The one in front of Shurijo Castle had an especially fluffy omelet that was amazing! I wanted to recreate it at home for myself and my family. My husband and daughter both said these could sell for $3 each!

Use half a can of Spam. Cut it lengthwise into 4 slices.

Add mayonnaise to a tamagoyaki (Japanese omelet) pan, place the Spam slices in, and turn on the heat. Press the sides against the pan to get a nice sear on all surfaces.

Meanwhile, prepare the egg mixture. Mix vinegar, water, and mayonnaise together, then add the eggs and mix well so the mixture is smooth. Add black pepper and mix again.

Once the Spam is done, lower the temperature of the pan by placing it on a damp towel. Wipe away any burnt bits and excess oil with a paper towel.

Pour the egg mixture into the pan and cook over medium heat. Adjust the heat as needed. Cut the omelet into 4 pieces with a spatula and cook the other side.

Tip: Stir the eggs quickly with chopsticks to break up bubbles for a fluffier texture. Use a spatula to shape the omelet to match the size of the Spam slices.

Shape the rice gently with plastic wrap to match the size of the Spam slices. Make about 8 portions, each about 1.75 ounces (50 grams). You can also make these as onigirazu (rice sandwiches).

Assemble by layering Spam and omelet between two portions of rice, then wrap with nori. Enjoy!

Variations:
- Add tuna mayo or kinpira (sautéed vegetables) for extra flavor.
- Try using bamboo shoot mixed rice for a different twist. Keep the seasoning light! - 10

- Bring the nori separately and wrap just before eating for a crisp texture. - 11
