This is a broth made with granulated dashi, soy sauce, and mirin.

Bring 1 1/4 cups of water to a boil in a small pot.

The amount of granulated dashi may vary depending on the product, so add a little at first and adjust to your preferred taste. Granulated dashi will dissolve in hot water at any time.

Once boiling, add soy sauce and mirin, and bring to a boil again to evaporate the alcohol in the mirin.

It's done! Reheat the prepared broth to serve it hot with udon or soba noodles that have been rinsed in cold water.

Using dashi made from bonito and kelp instead of granulated dashi will make it even more delicious.
