Mike's Spicy Sick Day Soup

ALBUQUERQUE, NEW MEXICO

Since 1/2 of my youngest students are getting over the flu - the other healthy 1/2 decided to make this spicy little Mexican vegetarian soup for them. Especially with extra spice and broth for their stuffy noses & sore throats.

They also served their soup with tortilla chips to scratch their buddies throats and flour tortillas to absorb any icky acids in their tummies. Well, it worked! This recipie is so easy and delicious! Spicy but delicious! Great work kiddos!

  • 1 tbspSalt Or Maggi [know maggie can murk up your broth a bit]
  • 2 tbspGround Cumin [reserve 1 for end of simmer]
  • 1/2 tspCrushed Mexican Oregano
  • 1/2 tspCrushed Mexican Esposito
  • 1 tbspHatch Green Chili Powder
  • 1LG Dried Bay Leaf
  • ● For The Fruits & Vegetables
  • 2 CupsMinced Hatch Green Chilies
  • 1Medium Diced White Onion
  • 2Sliced Deseeded Jalapeños [+ reserves - or 1/2 4 oz can]
  • 1/4 CupDiced Celery [with leaves]
  • 1 tspFresh Lime Juice [+ reserved wedges for serving]
  • 1LG Washed Diced Potato
  • 1 CupFresh Cilantro [+ reserves]
  • 1LG Tomato [or can of ROTELL]
  • 1 tbspFine Minced Garlic
  • ● For The Sides & Garnishments
  • as neededWarm Flour Tortillas
  • as neededLime Wedges
  • as neededMexican 3 Cheese
  • as neededSliced Or Canned Jalapeños

    Here's what you'll need.

    Begin your broth and bring to a steady simmer. Chop your vegetables and simmer those for 30 to 35 minutes. Then add your reserved tbsp Cumin and stir.

My culinary specialties as an easy going Chef include Asian, Mexican, Cajun, BBQing, Grilling, Irish Pub food, Low Country foods, anything seafood related, extra spicy foods, fresh meat, extra fresh vegetables, US comfort, kid friendly and super fast, quick and easy foods.
