Cut the vegetables and chicken into bite-sized pieces.

Add the carrot and daikon to the dashi stock in a pot and bring to a boil over high heat. Once boiling, add the chicken, shiitake mushrooms, soy sauce, mirin, and sake. Reduce to medium heat and simmer.

If using instant dashi powder, add the carrot and daikon to water and bring to a boil over high heat. Once boiling, add the dashi powder, chicken, shiitake mushrooms, soy sauce, mirin, and sake.

When the vegetables are tender, taste and add salt as needed.
Add grilled mochi (rice cakes) to the soup.
